Spicy, rich and full of flavour, this stew was created in the Jama Masjid and Daryaganj areas of Delhi in the late 18th century, towards the end of the Mughal Empire.
It was cooked overnight in an earthern pot in mass quantities for the king’s labourers in lieu of payment, and served in the morning before work.
That’s how it got its name: the word nihar comes from the Arabic word nahar, which means morning. It is typically made with tender cuts of meat.
